Can anyone give me some insight as to what a SOC Analyst does?

One thing to consider here is that job roles differ between companies. You'll find SOC analyst is a specific role, normally within a MSSP or a large company with a big security resource that can manage it in house. As some of the other posts said, normally deal with triaging alerts and escalating to incident reports.

On the flip side, you have companies that don't have huge budget for SOC or potentially MSSP, so they would more likely require some more generalist Security resource, normally starting at Security Analyst - whilst the role can be similar in terms of triaging alerts and tuning logging, it would likely also cover more generalist areas that a SOC analyst wouldn't, like engineering, awareness, risk and compliance - mainly because the company may not have the resource to cover those internally.
